- 1/2 lb Velveeta Cheese
- 1/2 lb. butter
- 1/2 cup cooked mashed sweet potatoes
- 1/2 tsp. apple pie spice -season to your taste
- 1 tsp. vanilla
- 2 1/2 lbs. confectioner’s sugar
- 1 cup chopped pecans-optional
Melt the cheese and butter in a saucepan on low heat, stirring until smooth. Remove from heat. Add the spice to the sweet potatoes and taste to see if the spice is right for you. Add the sweet potatoes to the warm mixture and mix well. Add the vanilla. Sift the sugar in a large mixing bowl. Stir the sweet potato mixture into the sugar using a large spoon or hand as this will be thick. Mix well. Add the pecans if desired and mix. Line a 13 x 17 sheet pan with foil or wax paper. Dump the fudge in the center and work outward to corners until you get the thickness of fudge you desire.
Shape with hands until you have square corners. Chill in refrigerator about 15 minutes and then cut into squares. Makes about 4 lbs. of fudge or 64 1 oz. squares.
