- 1 stick butter softened
- 1 1/2 cups sugar
- 5 eggs
- 1 cup cooked mashed sweet potatoes mixed with 1/4 cup sugar and 1/2 tsp apple pie spice
- 4-5 cups cubed dry bread
- 1 15 oz. can crushed pineapple drained well
- 8 oz condensed milk
Preheat oven to 350 degrees. Grease an oblong baking dish with butter- 9 x 13 size. Cream the butter and sugar. Add the eggs on at a time and beat until mixed well. Mix in the sweet potato mixture. Fold in the dry bread cubes until all are moistened. Pour into greased dish. Bake 30-40 minutes until desired golden browness is reached.
Drain pineapple well…I press juice out in a colander. Add pineapple to condensed milk and spread over warm pudding. Serve warm, may be reheated. So good!!!
