Ingredients:
- 1/2 cup softened butter
- 1/2 cup sugar
- 1 egg
- 1 tsp. grated lemon zest
- 1/2 cup sifted cake flour
- 1 tsp. vanilla
Instructions:
Preheat oven to 375 degrees.
Cream butter and sugar in mixing bowl. Beat in egg, lemon zest, and vanilla. Add flour and mix well by hand. Drop by teaspoonfuls onto a parchment lined or quick release cookie sheet-12 per pan. Bake for about 7 minutes or until edges are brown. Time varies with oven. Cool on cookie sheet before removing.
Makes 4 dozen thin brown edge wafer cookies.
